Jonathan Hepburn contributed this on Tassie shops:
Hobart and surrounding regions
So far as I know there are three dedicated shops in Hobart, one in New Town, one in Kingston and one in New Norfolk. There are other shops in Hobart, but they are either big department stores or shops that I haven't even heard rumours of before checking the phone book, so I know nothing about them.
Treadlies
Pretty good, although small. I haven't tried them much (too far away) but they specialise in MTBs and have a good reputation.

McBain Cycles
One of the best. Huge shop, lots of bikes, good people who are quite ready to ring a dealer for you while you're there. They may not know everything, but they'll offer to find out, and they'll offer to order in anything that they can get from one of their dealers. Spent ten minutes chasing up a 7-speed 11-30 LX cluster for me. Dead set legends.

Ken Self Cycles
A good shop, but a roadie specialist. They know about road bikes, but not MTBs. Ken used to make road bikes (might still do) and I have heard rumours that he can repair steel frames.

Ray Appleby.
Ray is a world veteran champion roadie. They have lots of cool stuff in a crowded shop and generally know what they're talking about. Better to deal with if you buy something from them, and you might be wise to check their MTB advice with someone else, but generally good people and always one to browse in when you're shopping for something. (If you look in a phone book, you might see a listing for 'Bilyard and Kings'. This is just an annexe in Ray Appleby's).

Tassie Cycles.
My personal favourites (I brought my current bike from them). Cool guys, cool gear, always ready with practical (as opposed to fashionable or money-making) advice and always ready to help you out with mechanical problems. Worth hecking out no matter what you're looking for.

New Norfolk; Don't know what they're called, I haven't been there (they're outside my phone book, let alone nice ride range), but I have heard lots of good things about them. This is farming country and most of their bikes would get used the way MTBs were supposed to be used, so they should be good with practical advice.
